Steaks
We take the time to 40 day-age our steaks for the most tender bison steaks you will ever have. Our bison is grass fed and finished on grains, barley and oats which gives our steak superb marbling. That marbling ensures a steak remains juicy and tender after it is cooked. Our steak has a mouth-watering, meat-forward flavour that has a touch of sweetness to it without tasting ‘gamey’.
Ground and Ground Chuck
Our ground features a beautiful deep red color and excellent lean quality. It breaks apart effortlessly during cooking, making it perfect for dishes like chili, tacos, lasagna, and meat sauces without the excess grease. For juicy burgers, we suggest working in one egg per pound as a binding agent.
The ground chuck has a higher fat content than our regular ground as it comes from a different cut of the animal. Fat ratio is approximately 75% lean to 25% fat. A small amount added to our lean ground can help to enrich the fat content when desired.
Jerky
A pride of our finished products, our Cherrywood smoked bison jerky is 28 day, wet-aged. Our grain-finished bison ensures that our jerky is incredibly tender; no strips of salty leather here. The meat is seasoned with all-natural spices that give it a nice sweet and peppery taste which couples with our signature Circle W Bison flavour.
Hip Stew and Bourguignon Cubes
The 1-inch hip stew cubes are perfect for any stew or braise. Just make sure to cook them “low and slow” – lower temperature and twice as long as a standard beef braise, due to the leanness of the meat.
The gorgeous bourguignon braising cubes are superb for a high end braise. They have a higher fat content then the Hip Stew but still require a “low and slow” approach for optimal results. You will notice significant marbling throughout. This is our family favourite for a delicious Bison Bourguignon.
Chuck or Short Ribs
Either choice of these ribs makes for a phenomenal rib supper. The best approach to ensure tender, fall off the bone results, is to wrap each rack snugly with both parchment paper and foil during oven roasting (for approx. 6 hours at 300 degrees) to lock in the moisture. Finish with a slather of your choice on the BBQ to caramelize.
Sausages
Our sausages contain fresh and flavourful bison loaded with choice herbs, spices or berries. A sausage from CircleWBison has a delightful texture and satisfying meaty flavour. Our sausages are incredibly juicy and tender and wrapped in a casing that is soft enough to be cut with a fork. Enjoy them for breakfast or any meal of the day.
Cheese Smokies and Hot Dogs
Best heated in the oven, on the grill, or over the campfire you will love our smooth and cheesy smokies. No artificial flavours, colouring or chemicals you might find in a standard store bought smokie – just high quality bison, spices and cheese.
You can feel confident knowing that our hotdogs are just as healthy for your kids as any of our products. Our hotdogs do not contain “leftover” meat scraps, chemicals, colouring or artificial flavours. Like our smokies, just the highest quality bison, spice and salt.
Pepperoni (Original, Honey Garlic, Montreal Steak)
Perfectly spiced, with just the right texture and a mild cherry smoke flavour, these pepperoni sticks are a hit for all ages in the family. We are sure they will become your favourite quick protein snack from the fridge.
